The best way to cook bacon to avoid the time, the mess and the greasy smell of bacon is to cook one or 2 pounds of bacon at a time in the oven.
Preheat oven to 400 degrees on grill or 'High' and brown the bacon on both sides.
Place cooked bacon on a metal rack to allow the excess grease to drip off or place on a plate of paper towels to absorb the excess fat.
Store in a plastic container in the freezer until needed.
Today I am preparing a bacon/mushroom quiche for friends and now I have the bacon ready and waiting in the freezer.
When I am expecting a crowd I cook more than 1 lb. of bacon and freeze it well ahead to help me manage brunch for a crowd.
