Feta & Pesto Steamed Wholegrain Uncle Ben's Rice

Recipe By: Miriam Borys (inspired by my son Jonathan who craved pesto & feta - thanks for the idea Jonathan!)

Yield: 4 servings

1 cup Uncle Ben’s Wholegrain Brown Rice

2 cups water
1 ½ tablespoon pesto sauce
½ cup feta cheese - broken up into small chunks or cubes
¼ cup olive oil
Salt & pepper to your taste
Cook rice as per directions on the box. I found that the directions are perfect and the rice comes out light and fluffy every time.
If serving the rice hot for dinner, add pesto, oil, salt and pepper and stir well to mix in the pesto sauce.
Add feta chunks and stir. If left long enough the feta will start to melt. This is also delicious but I love the feta chunks.

For a quick and easy rice salad mix pesto, oil, salt and pepper into rice and allow to cool
 in fridge. When cool add feta cheese. This can be used for a rice salad.  If desired add vegetables of choice to this cold salad.
