2 cups egg whites<br />
1 tsp vanilla<br />
1 </span><span style="font-family: 'Verdana'; font-size: 12.000000pt;">1⁄2 </span><span style="font-family: 'Verdana'; font-size: 12.000000pt;">cups sugar divided<br />
2 tsp orange peel grated fine

<p><span style="font-family: 'Verdana'; font-size: 12.000000pt;">Sift together </span><span style="font-family: 'Verdana'; font-size: 12.000000pt;">3⁄4 </span><span style="font-family: 'Verdana'; font-size: 12.000000pt;">cup sugar with flour, cream of tartar, cinnamon,
ginger and allspice<br />
Beat whites until frothy, Beat until light and opaque. Slowly add </span><span style="font-family: 'Verdana'; font-size: 12.000000pt;">3⁄4
</span><span style="font-family: 'Verdana'; font-size: 12.000000pt;">cup sugar, add vanilla and orange peel and beat until very light
Gently fold flour mixture into egg whites in 3 additions. Careful to
not overfold (don’t want to deflate the egg whites)

<p><span style="font-family: 'Verdana'; font-size: 12.000000pt;">Delicately spoon mixture into ungreased 10” tube pan<br />
Bake for 35 - 45 minutes until cake tester comes to clean and top
of cake springs back when lightly touched<br />
Leave cake in pan and invert on cake pan feet until cool (air needs
to circulate underneath)<br />
To remove cake from pan, use a long thin knife to loosen edges of
cake from pan. Then loosen bottom of tube from pan with knife

<p><span style="font-family: 'Verdana'; font-size: 12.000000pt;">Serve with Caramel Sauce and Whipped rum cream.

2 cups sugar<br />
1.5 cups heavy cream
1/4 cup butter

<p><span style="font-family: 'Verdana'; font-size: 12.000000pt;">Stir the water and sugar together in medium sized saucepan. Cover and
bring to boil over medium-high heat. Remove lid and cook without stirring,
until the mixture turns a light golden colour (this takes about 40 minutes at
a med-high heat). Remove from heat. Pour cream through sieve, standing
well back. When sputtering subsides, whisk in butter.

brandy or rum.

These are fresh beets that are already cut up which makes making soup so much easier. I have also seen these fresh beets at Whole Foods) SAVE 2 CUPS OF FRESH BEETS to add at the very end. When the soup is finished....open the lid of the pressure cooker safely and add the fresh 2 cups of fresh diced beets. This will add color and flavor to your already completed soup. No need to cook any more.</p><p>fresh dill or 2 tbsp. dried dill</p><p>2 bay leafs</p><p>salt & pepper</p><p>4 cups chicken stock (use vegetable stock if desired)</p><p>4 cups water</p><p>1 tbsp. '<span face="arial, sans-serif" style="background-color: white; color: #5f6368; font-size: 14px; font-weight: bold;">Better Than Bouillon' </span>chicken concentrate.</p><p>This time I used an instant pot as it is so much easier and quicker to make soup.</p><p>Turn instant pot onto sauté first.</p><p>Add diced onion, carrots, celery and sauté until onions are semi transparent.</p><p>Add beets, potatoes, dill and bay leafs.</p><p>Continue to stir in all the vegetables.</p><p>Add chicken stock and chicken concentrate and water. Add salt and pepper to taste.</p><p>Turn off instant pot and then press 'pressure cook' setting. Mix well</p><p>Add all the wet ingredients to another bowl including the juice of 2 lemons. Beat well.</p><p>Add wet ingredients to the dry and mix well. Set aside while the griddle or pan is heating up.</p><p>Ladle 1/4 cup of the batter onto the hot griddle for each pancake. Whisk together and set aside.</p><p>Sprinkle evenly onto the bread in the baking dish the diced green onion, meat, artichokes, peppers, cheese.</p><p>Pour the egg mixture on top of the bottom layers, gently so as not to disturb the placement of all of the ingredients.</p><p>Sprinkle the top with shredded cheese and green onion.</p><p>Bake for 25-30 minutes at 350°F (180°C). Rub the entire skin surface with olive oil as this helps to hold the herbs in place once you sprinkle them on.</p><p>In a small bowl, mix together dried or fresh (I use both) </p><p>1 Tbsp. rosemary (fresh and diced)</p><p>2 tbsp. sage</p><p>2 tbsp. thyme</p><p>1/4 cup fresh parsley</p><p>1 tbsp. sea salt</p><p>1 tbsp. pepper</p><p>Italian seasoning optional but tasty ( 2tsp.)</p><p>herb de Provence if you have it.(2tsp) optional but tasty.</p><p>Sprinkle the above herbs all over the skin of the turkey.</p><p>Place the turkey in the fridge overnight.</p><p>On serving day, preheat oven to 400°. Once preheated place the turkey in the hot oven (middle rack) for 25 min.</p><p>Reduce the heat to 350° and continue to roast until the internal temperature of the breast is 165°F. Once the bird is out of the oven the internal temp. will climb to around 173°, which is recommended. I use a probe thermometer to ensure the internal temp. is correct. The fact that nothing has to be pre-cooked is amazing and the result is a very tasty stew for family or friends. This can also be put together the day before and refrigerated. No need to dirty other dishes as this can be mixed right in the pot you are cooking it in.</span></span></p><p><span face="arial, sans-serif" style="color: #202124;"><span style="background-color: white;">Pre heat oven to 350°. Top rack will be placed in the middle of the oven.</span></span></p><p><span face="arial, sans-serif" style="color: #202124;"><span style="background-color: white;">In a large dutch oven or stainless steel pot (with tight fitting lids) add beef chunks, salt & pepper, tomato paste, flour and vinegar. It has only been recently that I use this method and it is the best roast beef ever. </p><p>The roasting time depends on the weight of your roast. This cooks the prime rib to a medium rare. If you wish the prime rib to be more well done, leave the roast in the oven at 500° for longer.</p><p>So, if you buy a 2 pound roast, you multiply 2X 5 and the roast will stay in the oven at 500° for 10 minutes <u><i><b>plus add 5 minutes to make up for opening the oven</b></i></u>. When I am cooking for a crowd I roast my prime rib earlier in the day and slice it when it is cooler and then just before serving I reheat the roast just slightly to serve.</p><p>Decide when you want the roast to be ready for carving. If you want dinner served at 6pm, preheat your oven to 500° at 3:20pm (oven rack in the center of the oven). When the oven is ready, place the roast on a shallow roasting pan of your choice and place the roast quickly into the preheated oven at 3:45pm. Close the oven quickly so that the heat doesn't escape. Set your timer for 15 minutes. Roast for 15 minutes at 500° only. Then TURN OFF THE OVEN and allow the roast to remain in a closed, undisturbed oven, for 2 hours. DO NOT OPEN THE OVEN DURING these 2 HOURS. I often tape the oven shut with a paper reminding myself not to open the oven (this seems a bit picky but you will be surprised how many times I go to check on my roast). The paper reminder is also a warning to guest who may want to peek too. After the 2 hours remove the roast and carve the roast to serve. Do not open the plastic wrap that it comes in until your filling is ready and cooled as the dough dries out very quickly. Be prepared with a damp, clean tea towel to lay across the phyllo dough once opened. The dough will dry out very quickly and become unusable as you are assembling the spanakopita.</div><div><br /></div><div>1/2 cup olive oil & 1/4 cup melted butter to brush onto the phyllo pastry</div><div><br /></div><div>1 glass baking dish (please see photo below)</div><div><br /></div><div>Assembly:</div><div><br /></div><div>Sauté onions and garlic in 3 tbsp. olive oil and butter until onions are transparent. Remove from the heat. </div><div><br /></div><div>To prepare the Swiss chard it is important to remove the steam from the leaves and there are several ways to do this effectively. For this recipe I gently tore the green leaves away from the center stems. At this point I have a large bowl in the sink filled with cold, clean water and I immerse each leaf deep into the clean water. This is the cleaning stage and it is very important. The leaves stay immersed while you trim all of the Swiss chard.</div><div>After all leaves are rinsed of dirt or debris, transfer to a salad spinner or onto a clean tea towel to remove most of the excess moisture.</div><div>At this point I place the leaves onto a large cutting board and chop into small pieces so they can be cooked.</div><div>Rinse and trim the dill and parsley as well. Chop also into small pieces.</div><div><br /></div><div>Meanwhile, continue the food prep by adding together 2 eggs, ricotta cheese, feta cheese in a large mixing bowl. Mix well and set aside.</div><div><br /></div><div>Add chopped Swiss chard and spinach to the cooked onions on low heat on the stove. Stir well to ensure all the leaves are coated with the onion, garlic, oil and butter.</div><div>Add the egg mixture to the chard mixture and continue to mix well until well incorporated.</div><div><br /></div><div style="text-align: left;"><span style="background-color: white; color: rgba(0, 0, 0, 0.95); font-family: "Source Sans Pro", "Times New Roman", serif;">Open the phyllo dough to it's full length and immediately cover with a damp tea towel...not wet but just damp. This will help to prevent the dough from drying out.</span></div><div style="text-align: left;"><br /></div><div style="text-align: left;"><span style="background-color: white; color: rgba(0, 0, 0, 0.95); font-family: "Source Sans Pro", "Times New Roman", serif;">Lay one sheet of phyllo dough in prepared baking pan (sprayed with baking spray), (cover dough with the damp tea towel each time your remove one sheet) and brush lightly with olive oil & butter. Lay another sheet of phyllo dough on top but turn the dough so it runs the other way. Brush again with the oil/butter mixture. Repeat this process by adding two more sheets of phyllo. Not to worry because the sheets will be bigger than the baking dish and will overlap the pan. Spoon all of the Swiss chard/spinach mixture onto the sheets of phyllo in the baking dish. Be careful not to tear the phyllo when you are spreading it out. To finish this off, repeat the dough process again by laying down four more sheets of phyllo dough, one at a time, on top of the chard mixture, brushing each sheet with oil/butter. Finally, fold over all of the overhanging dough onto the top of the filling to seal your spanakopita. Brush again with oil/butter. Bake for 35-40 minutes at 375° until golden brown. Remove from the oven and allow to cool for 10 minutes before cutting. lots of curry powder, as much as you want (I am using 1/8 of a cup today) </div><div>2 teaspoons ground cumin </div><div>1 tablespoon chilli powder </div><div>¼ teaspoon cayenne pepper </div><div>¼ teaspoon dried oregano </div><div>4 green onions - chopped (optional for a garnish but not necessary) </div><div><br /></div><div> Cut up bacon into small pieces and sauté the bacon and chopped onions until the onions are transparent.
Drain cans of beans and rinse well with cold water. Add rinsed and drained beans to a slow cooker as well as the the rest of the ingredients and stir well.
Turn slow cooker onto low and set for 4 hours. Stir once at the 2 hour mark. She uses a technique called 'Spatchcock Chicken'. <a href="https://www.youtube.com/watch?v=Ppa1bxB89vg" target="_blank">This is a technique that allows you roast the chicken flat for a more even roasting. Please click here to see a great video from Chef John on how to spatchcock a chicken.</a></p><p>Andrea's secret is a recipe she borrowed from Donna Hay "the instant cook" cookbook. The author uses a combination of herbs, lemons, garlic and olive oil and the results are fantastic.</p><p>When I roast chicken I use a probe thermometer so that I know exactly when the chicken is done. The internal temperature must be a minimum of 165° to be safe to eat and is still tender and juicy. Mix together all the dry ingredients first in another bowl and then add dry ingredients to the wet ingredients. Mix only until combined but do not beat. This batter will be lumpy and thick. I just happen to have red onion in the house)</p><p>3 dashes red hot franks sauce (add more if you want more of a bite)</p><p>1/2 cup of pickles asparagus (or just throw in what is left in the jar)</p><p>2 tbsp. apple cider vinegar or lemon juice (vinegar is a good substitute when fresh lemons aren't available)</p><p>( I had a jar of pickles asparagus in the back of my fridge forever and I just wanted to be done with keeping it so I decided to add it to my hummus. Tastes awesome too! The beauty of making your own hummus is that you can add whatever ingredients you have in your fridge...everything seems to work well)</p><p>Add all the above ingredients into a food processor and process until the hummus is at the right consistency. Mix thoroughly for 2 minutes until you form a soft dough. If the dough feels dry, add teaspoons of water (one at a time).</p><p>Divide the dough into equal balls of approximately 1 oz. each. Place the dough balls onto a large plate and cover with a damp cloth to keep the dough soft and moist.</p><p>Line your tortilla press with 2 squares of thick plastic.<br />Place each ball separately between the two plastic squares on the tortilla press and press until each tortilla measures 5 inches in diameter.</p><p>Heat a flat skillet on high and cook each tortilla turning 3 times. text-align: center;"><br /></div><br /><br /><p></p><p><br /></p><p><br /></p>miriam borys busbyhttp://www.blogger.com/profile/14906710793741153773noreply@blogger.com0tag:blogger.com,1999:blog-2113726312107533505.post-74337709150428624932021-07-08T07:24:00.001-07:002021-09-06T07:25:15.155-07:00Rosemary Garlic Marinade for Chicken Kabobs<p><u>Yield 10 Kabobs</u></p><p>1 large white onion</p><p>1 yellow zucchini</p><p>1 green zucchini</p><p>16 medium sized mushrooms of choice</p><p>10 cauliflower florets (medium size)</p><p>3 chicken breasts (marinated for a minimum of 2 hours, please see marinade recipe below).</p><p>2 large lemons (reserve the lemon juice for the Kabobs once they come off the BBQ)</p><p><u>Chicken Marinade </u></p><p>2 1/2 tbsp. red wine vinegar</p><p>1 tbsp. olive oil</p><p>1 tbsp. honey</p><p>3 garlic cloves</p><p>2 tsp. rosemary fresh, chopped</p><p>1/2 tsp. thyme</p><p>1 tsp. coarse salt</p><p>black pepper</p><p>Measure out the above marinade ingredients and add to a large zip lock bag. </p><p>Cut up the chicken breasts into large chunks first and add to the zip lock bag for marinading. Store in the fridge and rotate every time you walk by the fridge. Marinade for a minimum of 2 hours.<br /></p><p>Prepare all vegetables first by washing. Then cut up all the vegetables into approximately 1 - 1 1/2 inch cubes.</p><p>Once the chicken is marinaded start the process of skewering the vegetables and chicken onto each skewer to make the Kabobs. If using bamboo skewers they must be soaked first in water to prevent them from burning on the BBQ. <br />How you arrange the food on the skewers is up to you but we suggest you add a harder vegetable at the end to anchor the food on the skewer. <br />Save the left over marinade and once all the food is onto the skewers drizzle the marinade over the kabobs and BBQ on medium heat for approximately 45 minutes until chicken is fully cooked and at an internal temperature of 170°.</p><p>Immediately after cooking, squeeze the juice of 2 lemons over the kabobs and serve. Trim asparagus by taking each asparagus spear in your hand and bend near the blunt end. This allows for a perfect break that removes the woody end.
